Ginger and Lime Infused Salmon with Fragrant Salad

Ingredients

Salmon Marinade:

2 tbsp crushed fresh ginger

3 tbsp fresh lime juice

4 tbsp hoisin sauce

4 tbsp soy sauce

1 tsp fish sauce

1 tsp Chinese cooking wine

1 tbsp liquid honey

1 tsp chilli flakes

2 cloves of garlic, crushed

2 spring onions, finely chopped

Salad:

2 carrots, grated or julienned

1 finely sliced small red onion

1 medium cucumber peeled, deseeded and chopped into long fine batons

1 handful each of finely chopped coriander

1 handful of fresh bean sprouts

1 handful of snow peas sliced lengthways

1/4 cup toasted sesame seeds

Salad Dressing:

1 clove garlic, crushed

¼ cup fish sauce

¼ cup rice wine vinegar

1 tbsp sesame oil

1 tsp brown sugar

½ chilli, finely chopped

Juice of 1 lime

Method

Wash salmon fillets and pat dry.

Combine all ingredients of marinade, rub over salmon fillets, cover and refrigerate for 1 hour or so.

Heat grill in oven to 200˚C.

Take salmon from marinade, place on baking tray and grill for 10 -15 minutes (or until crisp at the edges).

Meanwhile, combine all salad ingredients in a bowl.

Combine all dressing ingredients in a dish, drizzle over salad, just before serving.
